Another day of waking up in a good mood after another great night of sleep, according to my FitBit Surge. Clearly taking a week off from business travel has done wonders for my stress levels.

The good news is my body has returned to a ketogenic state and I am burning my body fat. What put me back into ketosis? Probably not eating any processed food with no sugar or grains, doing intermittent fasting and compressing my eating down to about a 5 hour window, and completing a rigorous workout featuring heavy (for me) deadlifts.

One of the great benefits for me of being home is it allows me prepare my own food. Tonight I made a great side dish, cauliflower and zucchini fried rice. I used my Vitamix to blend cauliflower into “rice” and cut up some zucchini and half an onion. One trick is to use cheese cloth to squeeze as much water out of the cauliflower a possible. I sauteed all of this in bacon drippings with salt, pepper and then further seasoned with coconut aminos (kinda like soy sauce). Then I spread it all out on a baking sheet and put under the broiler until brown and crispy. This was absolutely delicious!

I feel great as we head past hump day and, as always…

After a full night’s sleep I woke up in a good mood after quite a stressful work week. I broke out the trusty Vitamix today and cranked out a beautiful green smoothie! I sometimes get asked for my recipe, so here is what I did today:

  • 1 Cup – Almond Milk (unsweetened)
  • 1 Grannysmith Apple
  • 1 Cup – Strawberries
  • 1 Banana
  • 1 Carrot
  • 1/2 Cucumber
  • 1 Cup – Baby Spinach
  • 1 Cup – Kale
  • Add to taste: Just Like Sugar Table Top Sweetener
  • 1 Cup – Ice

I usually blend up everything but the leafy greens. Once the chunky stuff is smooth, then I add the greens. After that, I add the ice to finish it. The sweetener is optional and is zero calorie and all-natural. I vary this (celery, peeled lime, beet, etc.) depending on what I have available–adding avocado is a must!

I feel so healthy on days when I consume this wonderful concoction! As always…

Good Choices

Woke up feeling pretty good this morning after getting a good night’s sleep–less stress as the weekend is approaching. Got back to my routine of eggs, bacon and a potato for lunch with a green smoothy (love my Vitamix). I made a good choice for dinner as many times my son and I treat ourselves with Five Guys. Instead, I got a salad from Chipotle (no rice, no beans, double meat).

The weekend is nearly here and I’m ready to recharge–as always…

I’m Back…

I took a couple of days off from posting entries in the food diary–needed to chill over the holiday weekend. :) Today I did a good job of sticking to my version of Primal/Paleo eating with a lunch of a grass-fed cheeseburger (no bun) and a green smoothy, and then a dinner of a grilled pork chop with steamed broccoli and cauliflower grits. Now I meant to make cauliflower rice, but I overdid the cauliflower in the Vitamix. :) By the way, the “grits” tasted great!

Single Dad (For A Few Days)

I’ve been Mr. Mom for the past few days as my wife has been out of town on business. One of the kids stayed home from school sick today. Very busy day for sure. After staying up late and watching the Tampa Bay Lightning win in overtime, I ended up only getting about 6 hours of sleep and my stress levels are high. :(

My first meal, which I ate about 2pm, included another green smoothy made with my awesome Vitamix–the best blender on the planet! Then I ended up getting my sick son and myself fast food for dinner.

I’ve been consistently in ketosis for well over a month–I’m a lean, mean fat burning beast!

The long weekend will be here shortly so, as always…

Green Smoothy Returns

Back in town after a weekend of travel and it felt so good to make and consume a green smoothy (thanks to my trusty Vitamix)! I woke up feeling that Monday morning work stress, a common occurrence these days :( I wanted to work off some of said stress, but I ended up cutting my evening workout short–just not feeling it.

I hope your work week started in a positive fashion and, as always…

Fancy Lunch

Woke up a little stressed about work, which is not uncommon on a Monday morning. I got a decent amount of sleep, which is good.

Paleo-DessersI had a business lunch at the Capital Grille–I love that place! After my evening workout I whipped up some breakfast for dinner with a Paleo Strawberry Milk shake from one of my favorite cookbooks, Paleo Desserts: 125 Delicious Everyday Favorites, Gluten- and Grain-Free. I’m not going lie, it was delicious and, with my trusty Vitamix 6300, making the shake was simple and fast!

I hope your week is starting out great and, as always…

Primal/Paleo Eating Day

Remedy for my slight hangover :)

Got a decent night’s sleep last night and woke up feeling pretty good. I did have that third glass of red wine last night and, believe it or not, I could feel the some slight residual hangover symptoms–nothing that a quick dose of caffeine didn’t fix!

This is the Vitamix 6300 which is the model I have.

I had a very busy day running the kids to swimming practice and dance rehearsal while working on this web site and doing some gardening in between. In keeping with my daily intermittent fasting ritual I had my first meal at around 1pm: eggs, bacon, a potato along with a green smoothy chocked full of spinach, kale, banana, apple, strawberries, celery, cucumber and lime. Super easy to make with my Vitamix! Ended the day’s eating around 7pm with leftover bratwurst and broccoli with another baked potato.

My diet today stayed right in line with my version of Primal/Paleo eating–delicious and highly nutritious, real food minus the refined sugar, grains, and processed food I aim to avoid.

I hope you are enjoying the weekend and, as always…

Feed The Machine

The Vitamix makes prep and cleanup for protein shakes easy!

Woke up this morning feeling great after about eight hours of sleep–since the kids didn’t have school I slept until 7am (unheard of for me). Had a busy day with meetings and conference calls so I took the easy route for my first meal: a protein shake with baby kale and spinach. This works so well for me when I don’t have time to cook a proper meal and my Vitamix makes both preparation and cleanup a snap!

I had a big workout after work today and came home starving. :) I seemed like I couldn’t eat enough food and kept heading back to the kitchen for more. I listened my body and kept feeding the machine with mostly food that fits my version of Primal/Paleo eating. I say “mostly” because I went past my normal two glasses of red wine :) and then chowed down on one of my guilty pleasures: popcorn popped in coconut oil and grass-fed butter with lots of sea salt–yum!

The result of all this eating was an estimated total calorie consumption of over 3,100 calories. Hey, no sweat because my body craved the fuel and I managed to keep my estimated carbohydrate load to only about 162g. I would guess my body will stay in ketosis despite the overall calorie consumption.

The weekend is here so, as always…

Darn You Leftover Cake

I’ve mentioned plenty of times how addictive sugar and grains are to me! Yesterday I mentioned indulging in some cake and ice cream and not stressing about it. I was banking that the others in the house might eradicate it before today but, alas, when I got home from the gym, there sat the leftover goodies! :( Having no control, I ended up having a bit again tonight.

This is what I use to make my green smoothy

Despite not getting enough sleep, I woke up in a good mood with less stress. Other than the junk I mentioned above, the rest of my diet pretty much followed my version of Primal/Paleo eating. I followed my ritual of intermittent fasting and had eggs, bacon, a potato and a wonderful green smoothy (effortlessly, hand crafted with my trusty Vitamix 😉 ). Even with the cake and ice cream, I kept my estimated carbohydrate intake well under my goal of 200g, so I would bet my body stayed in ketosis. Hopefully my new Ketonix Sport ketone breath analyzer will show up soon and I can continue my daily testing.

We are halfway through the work week so, as always…
